Healthy After-School Snacks

After-school snacks don’t have to be boring!  They are an important way to refuel hungry children after a busy day at school and an easy way to pack some extra vitamins and minerals into their diets.  The small, nutritious snacks listed below are quick for busy parents to put together, contain a variety of good foods and can be easily done on a budget:

Vita-Weats with cheese and tomato

Muesli bars (We love Carmans!)

Banana and oat muffins

Pita bread pocket with veggies (suggestions include tomato, cucumber, capsicum and a light smear of avocado dip)

Lightly salted homemade popcorn

Vegemite and cheese mini-wraps

Muesli, sultanas and apricot mix

Fruit skewers (try to use seasonal fruits to get a wide variety)

Veggie sticks dipped in hummus

Pizza faces (recipe below)

Pizza faces can be made to include a variety of toppings that you and your family enjoy, however we have provided one suggestion below:

Pizza Faces

Makes: Four halves of a muffin with toppings

Serves four.

Ingredients:

2 English muffins

1/2 cup tomato paste

1/2 cup cheddar cheese, grated

1/4 cup capsicum strips

4 pitted olives, halved

1/2 cup shredded ham

Method:

Preheat grill to medium temperature

Slice English muffins in half

Spread with tomato paste and sprinkle on cheese

To make the face: Arrange capsicum strip as a mouth, two half olives for eyes and sprinkle on ham for hair

Place under grill for 2 minutes, or until cheese has melted

Serve warm
